Big Boy Protein Salad
Ingredients:
- 1 cup cooked quinoa (healthy carbs)
- 1 can black beans (15 oz), drained and rinsed (healthy carbs, protein)
- 1 cup diced grilled chicken breast (high protein)
- 1 cup cherry tomatoes, halved
- 1/2 cup diced cucumber
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
- Salt and pepper to taste
Instructions:
- In a large bowl, combine the cooked quinoa, black beans, diced chicken breast, cherry tomatoes, cucumber, red onion, and cilantro.
- Squeeze the juice of one lime over the salad for a zesty kick.
- Season with salt and pepper to taste.
- Gently toss all the ingredients together until well mixed.
- Serve immediately, or refrigerate for a refreshing meal later.
